Quality, community, and bread that's almost too good to share

We believe in the old ways—a 48-hour sourdough fermentation, stone-ground flour from Texas mills, and a wood-fired oven that's been tended daily since we opened in 2018. Every loaf is shaped by hand. Every croissant is laminated in-house.

We don't rush. We bake. Our starter, "Betty," has been with us from day one. We source wheat from Barton Springs Mill, featured in Bon Appétit. Our oven was built by a third-generation baker from Lyon.

What makes us different

We don't cut corners. Our oven, our flour, and our approach set us apart from any grocery-store bakery. Every loaf tells a story.

Wood-fired oven

Built by hand in Lyon. Fired daily since we opened. Blistered crust, open crumb, that impossible-to-replicate char. Our oven was imported and assembled on-site. No convection. No shortcuts.

Local flour

Barton Springs Mill, Barton Creek Farms. Stone-ground, no additives. Texas wheat in every loaf. Featured in Bon Appétit. We know our farmers. They know our bakers.

Bread classes

Monthly sourdough workshops. Take home a starter and a loaf. Learn the folds, the timing, the feel. $85/person, 12 seats. Book early—they sell out.
