We believe in the old ways—a 48-hour sourdough fermentation, stone-ground flour from Texas mills, and a wood-fired oven that's been tended daily since we opened in 2018. Every loaf is shaped by hand. Every croissant is laminated in-house.
We don't rush. We bake. Our starter, "Betty," has been with us from day one. We source wheat from Barton Springs Mill, featured in Bon Appétit. Our oven was built by a third-generation baker from Lyon.
